中華麹があったら、ほんとに便利。チャーハンも麻婆豆腐もちゃちゃっとできるし、暑い日には冷ややっこの上にのっけたり、キュウリの塩もみの上にのっけるだけで副菜完成。私は海南鶏飯を作るのが簡単にできるのでよく使ってます。

Koji keeps adding! With new harvested green onion, garlic, i am making green koji. This is not hot as there's no chili in it. But green onion, garlic and ginger is typical Asian Sofrito like flavoring base that can be used for any savory dish. If you mix with oil, then you can make any Chinese dish like fried rice, mapo tofu or just add to hot water to make soup.. If you use it as a sauce as is, you can make any summer Japanese dish like cold tofu (hiyayakko) or even for cold weather, this sauce will warm your body up! Of course, you can use it for marinating always as koji will tenderize protein. My favorite is quick Hainanese chicken rice. You can cook the dish in the microwave without using stove, so it's suited for the hot day!
Green Koji is made with: Rice koji, salt, green onion, garlic, ginger and water.
