Bright Yuzu Kick • Gentle Heat

While not as spicy as other shichimis, it highlights the aroma and taste of dried yuzu citrus bringing a lemony freshness and bitterness to the dish.

Shichimi (Shichi = 7; Mi = taste) is a Japanese spice mix that has chili as a main ingredient. Historically, it was used as a medicine and vendors make up the mix according to the customer's health needs. Sprinkle over noodles, soups, or proteins of your choice. You can also mix in salad dressings, and fried foods. Try over popcorn or French fries!

Ingredients: Thai pepper, Korean pepper, paprika, sansho pepper, white and black sesame seeds, green shiso powder, yuzu peel, seaweed.

What Is Shichimi?

Shichimi Togarashi (七味唐辛子), often simply called shichimi, is a traditional Japanese seasoning made from a blend of seven spices. Its name literally means “seven-flavor chili pepper.” Unlike a simple chili powder, shichimi combines heat with citrus, herbs, seeds, and other aromatic flavors.

An image of shichimi spice Recipes vary, but common ingredients include red chili pepper, sansho (Japanese pepper), sesame seeds, dried citrus peel, ginger, nori or aonori seaweed, and hemp or poppy seeds. Different regions and producers have their own blends, so one shichimi may taste citrusy and fragrant while another may be hotter or more strongly flavored with sansho.

Shichimi is commonly sprinkled over udon and soba noodles, soups, rice dishes, grilled meats, yakitori, vegetables, and hot-pot dishes. Because it is normally added just before eating, its aroma and heat remain bright and noticeable.

Many of its ingredients naturally contain antioxidants, aromatic plant compounds, minerals, and healthy fats, although shichimi is normally eaten in small amounts and should be considered primarily a seasoning rather than a source of major nutritional benefits.

Shichimi is more than simply “Japanese chili powder.” Its combination of heat, citrus, nuttiness, aroma, and umami is designed to enhance food without overwhelming its original flavor.

What is Yuzu?

Yuzu (柚子) is an aromatic East Asian citrus fruit with an especially important place in Japanese cooking. The fruit is usually yellow when fully ripe and resembles a small, somewhat bumpy grapefruit or mandarin. Its flavor and fragrance are often described as a combination of lemon, mandarin, and grapefruit, although yuzu has a distinctive aroma all its own.

An image of yuzu Unlike oranges or mandarins, yuzu contains relatively little juice and many seeds. For this reason, the highly fragrant peel is just as valuable as the juice. Both are used to add bright citrus flavor without requiring large amounts of fruit.

Yuzu appears in sauces, ponzu, dressings, marinades, soups, desserts, beverages, jams, syrups, spice blends, and fermented seasonings. One famous example is yuzu kosho (柚子胡椒), a powerful Japanese condiment traditionally made from yuzu peel, chili peppers, and salt. Yuzu peel is also commonly included in seasonings such as shichimi.

Like other citrus fruits, yuzu contains vitamin C and aromatic plant compounds, particularly in its juice and peel. However, the nutritional value of a finished yuzu product depends on how it is prepared and how much is eaten.

Yuzu is prized less for sweetness than for its extraordinary fragrance and ability to brighten other flavors. Even a small amount can add a fresh, floral citrus character to sauces, seafood, meats, vegetables, sweets, and drinks.
