The literal translation Irizake is, "roasted sake". However, this is an ancient Japanese seasoning sauce that predates soy sauce. It is made by combining bonito flakes & umeboshi (salted plum) with sake for less salty than soy sauce, but with more umami that can be used in a wide variety of dishes. It can be used in any dish that you use soy sauce, but has a lighter color & more complex blend of flavors.
Ingredients: Sake (rice wine), salted plums, bonito flakes, sea kelp.
