The literal translation Irizake is, "roasted sake". However, this is an ancient Japanese seasoning sauce that predates soy sauce. It is made by combining bonito flakes & umeboshi (salted plum) with sake for less salty than soy sauce, but with more umami that can be used in a wide variety of dishes. It can be used in any dish that you use soy sauce, but has a lighter color & more complex blend of flavors.

Ingredients: Sake (rice wine), salted plums, bonito flakes, sea kelp.

*Needs to be refrigerated.

いりざけとは、文字通り「焙じた酒」という意味ですが、醤油よりも古くから伝わる日本の調味料です。鰹節と梅干しを日本酒に混ぜ合わせ、醤油よりも塩辛さを抑えながらも旨味が豊かで、様々な料理にお使いいただけます。醤油を使う料理なら何でも使えますが、色が薄く、より複雑な風味が楽しめます。
